DEFROSTING & HANDLING
How do I thaw the pastry?
Best method:
- Thaw in the fridge until workable (upto 48hrs)
- If needed, leave on the bench to defrost before unrolling to avoid any cracks
- You may also thaw the pastry at room temperature until pliable.
Can I thaw it in the microwave?
Not recommended. There is a chance for “heat spots” to develop on the pastry and cause cracks.
My pastry cracked when unrolling. What should I do?
It is likely still too cold.
Let it sit at room temperature for 10-15 minutes before unrolling. Use a rolling pin gently over the cracks to even out the surface.
How long does thawing take?
- Shortcrust may require more than 24 hours in the fridge
- Puff may require up to 48 hours in the fridge
Can the pastry be refrozen?
No, we do not recommend re-freezing for quality reasons.
BAKING & USAGE
Does the pastry come with baking paper?
No. The sheet is separated and rolled with an easy- peel plastic wrap, not baking paper.
Customers must remove the plastic before use.
Can customers bake on the plastic wrap?
Absolutely not. The plastic is not heat-safe and must be discarded.
Is the plastic wrap recyclable?
Not at this stage. Our current wrap isn’t recyclable yet, but we’re actively working on future solutions to make it more sustainable.

Yes! The roll is already at the perfect thickness, but you can gently roll it out if you prefer a thinner crust or want to stretch the pastry a little further.
